Bulk-building tacos

Ingredients

200g lean minced beef
½ packet of Old El Paso Taco Spice mix
50ml water
2 taco shells
Handful of iceberg lettuce
3 sliced tomatoes
1tbsp low-fat cheddar
1tbsp salsa

To make

Brown the mince and drain off any excess liquid. Add the Old El Paso mix and water. Bring to the boil, stirring thoroughly, then reduce the heat and simmer uncovered for ten minutes. While the mince is cooking, warm the taco shells in the oven on a low heat for three minutes. Remove from the oven and fill with the mince mix, then add lettuce, tomatoes, grated cheese and salsa.

Iceberg lettuce

Lettuce provides antioxidants that counteract the damaging free radicals generated by training.

Minced beef

Beef is a rich source of zinc, protein and creatine, which aids muscle recovery and builds muscle.

Cheese

Low-fat cheddar has high levels of protein and calcium without too many calories.

Salsa

The tomatoes in salsa are high in antioxidants, while the spicy peppers will give your metabolism a boost.
