Celebrate Pancake Day like an Elite Gymnast

Jay Thompson, international elite gymnast and British Commonwealth and European junior champion, has created his very own “mancake” recipe. If you are looking for something to help boost your energy levels and want to eat like an Olympic gymnast, why not give this healthy pancake recipe a go?

“This is my ‘go to’ pancake recipe which I eat virtually every day! Every morning I try to always eat a banana and blueberries as bananas are full of potassium and blueberries are a super food packed full of goodness,” says Thompson. “By eating these with a healthy and nutritious pancake you are bringing a little more excitement to what could be a typical and boring breakfast.”

For someone as active as Thompson the benefits of the recipe are clear. “Not only do these pancakes taste delicious, they are great to eat before exercise as they slowly release energy and are full of low carb protein, which is exactly what I am looking for to set me up for all the intense training I do day to day,” he says. “I have used coconut flour in this recipe. It’s a great addition to the standard pancake recipe as it is healthier, gluten free, and packs a whopping 5 grams of fibre per 2 tablespoons (with only 2 grams of total and saturated fat). It”s perfect for athletes looking for a nutritional balanced breakfast.”

Ingredients

  • 2tbs Extra Virgin Coconut Oil
  • 1tbs Agave Nectar
  • 3 Large Eggs
  • 1/4 cup Coconut Milk
  • 1tsp Vanilla Extract
  • 1/4 cup Organic Coconut Flour Sifted
  • 1/4 tsp Cream Of Tartar
  • 1/8 tsp Baking Soda
  • 1/8 tsp salt

Method

  • Cream together the coconut oil and agave nectar
  • Add the coconut milk and vanilla mix until smooth
  • Add coconut flour and mix until smooth
  • Lastly add the cream of tartar, baking soda and salt
  • Do not over mix. If you over mix the cream of tartar and baking soda, it won't work
  • Heat frying pan to medium and melt a little coconut oil
  • Use a ladle to pour a small amount of batter into the frying pan
  • Flip once only when the bottom of the pancake is golden brown (these pancakes do not bubble as much as other pancakes)
  • Transfer to plate and eat immediately with warm blueberries or any soft fruit and an extra squeeze of agave nectar
